Nice Gastronomy

Nice cuisine is based on simple produce, grown, raised or fished locally. The imagination of several generations, their herbs, spices and condiments achieved the simple, tasty colourful and healthy meals we know today.

 La Socca

Chick peas - Socca: a flat type of savoury oven baked pancake. Of golden colour, it is delicious if eaten hot and with a touch of pepper.

Anchovies - L'anchoļade: anchovies, capers and olive oil puree, spread on bread or vegetables. Curiosity: Nice's Angels Bay was originally called Anchovies Bay.

Capers and black olives - Tapenade: a puree mixed in olive oil and spread on grilled tartlets.

Courgette Flowers

Courgettes, peppers and aubergines: Ratatouille's main ingredients.

Courgette flowers - Fleurs de courgettes en beignets: soaked in beaten egg yolks and milk, coated in flour and fried. Delicious!

Garlic sauce - Aioli: garlic in a light mayonnaise sauce for fish and vegetables.

Mixed sea fish - Bouillabaisse Niçoise: a delicious seafish soup, garnished with aļoli or rouille.

Mussels and chips - Moules et Frites: a more modern and easy dish.

Onion, anchovies, olives - La pissaladičre: an onion tart full of flavour.

Pistou soup

Oranges - Florangettes: orange peel slices coated in sugar or chocolate.

Seasonal vegetables - Pistou: from the Latin "Pestare" e.g. crush basil leaves into a tasty vegetable soup with lots of garlic, olive oil and cheese.

Soaked bread - Pan bagnat: an emptied large loaf filled with tomatoes and Salade Niçoise ingredients.

Tuna, eggs, olives - Salade Niçoise: 3 of the main ingredients from this classic dish.
