Nice cuisine is based on simple produce which is grown, raised or fished locally. The imagination of several generations, herbs, spices and condiments have achieved the simple, tasty colourful and healthy dishes we know today.

Anchovies L'anchoïade: anchovies, capers and olive oil puree, spread on bread or vegetables. Nice's Angels Bay was originally called Anchovies Bay.
Capers and black olives Tapenade: a purée mixed in olive oil and spread on grilled tartlets.

Chick peas

Socca: a flat type of savoury oven baked pancake. Golden in colour, it is delicious when eaten hot and with a touch of pepper.
Courgette flowers Fleurs de courgettes en beignets: soaked in beaten egg yolks and milk, coated in flour and fried. Delicious!
Courgettes, peppers and aubergines Ratatouille's main ingredients.
Garlic sauce Aioli: garlic in a light mayonnaise sauce for fish and vegetables.
Mixed seafood Bouillabaisse Niçoise: a delicious seafood soup, garnished with aïoli or rouille.
Mussels and chips Moules et frites: a more modern and simple dish.
Onion, anchovies, olives La pissaladière: an onion tart full of flavour.
Seasonal vegetables Soupe au pistou: crushed basil leaves in a tasty vegetable soup with lots of garlic, olive oil and cheese.
Soaked bread Pan bagnat: an emptied large loaf filled with tomatoes and Salade Niçoise ingredients.
Tuna, eggs, olives Salade Niçoise: Three of the main ingredients from this classic dish.

Café de Turin: A super fresh and tasty seafood restaurant - 5 Place Garibaldi. Tel: 04 9362 2952.

Le Genève: Delicious home made dishes. At lunch time be sure not to miss the "Plat du Jour". We had an unforgettably delicious méchoui (roasted lamb) with roast potatoes and season vegetables priced at €9. For us, Le Genève was the best value for money restaurant (September 2009).1 Rue Cassini/Corner Rue Bonaparte, overlooking Place Garibaldi. Tel: 04 9356 7373.

Place du Pin is packed with excellent boulangeries, patisseries and confiseries, serving lovely baguettes, exquisite cakes, and zesty confectionery.
